Except my recipe, from the Engine 2 Immersion weekend, was a little different. Instead of 12 oz. vegetarian meat crumbles, my recipe calls for 8 oz. green lentils. Put the lentils in a small saucepan w/ 2 cups water (or a little more water, I think) and bring to a boil over high heat. Cover and simmer until lentils are very tender, about 40 min. Drain and set aside. Instead of spraying loaf pan, mine call for lining loaf pan with parchment paper. Also, mine says to water saute the celery, onion, and garlic. So the recipe I have uses no added oil and is more plant strong. I think it makes a delicious "Eatloaf".

Also, mine seemed to make too much to fit in 1 loaf pan so I put it into 2 loaf pans.
